Ingredients (all organic):
1/2 cup coconut oil (soft but not liquid)
1 cup sugar
1/2 cup unsweetened applesauce
1/2 vanilla extract
4 medium, overripe, mashed bananas (or 3 large)
1 teaspoon bicarbonate of soda
1/4 cup boiling water
2 cups flour
1 + 1/2 teaspoons baking powder
1/4 teaspoon salt
Heat the oven to 350°F.
Grease the base and sides of a 9" by 5" loaf tin with a little bit of coconut oil and a few sprinkles of flour. Gently bang the tin with the palm of your hand, to make sure the flour is evenly distributed.
Cream the coconut oil and sugar together.
Add the applesauce, vanilla, and mashed bananas.
In a small container/coffee mug, mix the bicarbonate of soda with the boiling water. Add this mixture to the wet ingredients.
Add the remaining dry ingredients to the wet ingredients - sift the flour and baking powder, and add the salt.
Mix until the flour is combined well, but do not overwork the mixture.
Pour mixture into prepared loaf tin.
Bake for 70 minutes. If the cake tester does not come out clean, bake for a further 5 minutes.
Leave to cool in tin for 30 minutes.
