Ingredients (Makes 8–10 bars)

Base Layer:

• 1 cup almond butter (smooth and unsweetened)

• ¼ cup pure maple syrup

• 1 teaspoon vanilla extract

• 1 cup unsweetened shredded coconut

• ¼ teaspoon sea salt

Chocolate Topping:

• ½ cup dark chocolate chips (70% cacao or higher, gluten-free)

• 1 tablespoon coconut oil

• 1 tablespoon chopped almonds or shredded coconut (optional garnish)

Instructions:

  1. Prepare the base mixture
    In a medium bowl, mix almond butter, maple syrup, vanilla extract, shredded coconut, and sea salt until well combined and slightly thick.

  2. Press into the pan
    Line a small baking dish (about 8×8 inches) with parchment paper. Press the mixture evenly into the pan to form a compact base layer.

  3. Melt the chocolate topping
    In a small heatproof bowl, melt dark chocolate chips and coconut oil together using a microwave in 20-second intervals or over a double boiler, stirring until smooth.

  4. Add the chocolate layer
    Pour the melted chocolate evenly over the almond coconut base. Spread gently with a spatula.

  5. Chill until firm
    Sprinkle chopped almonds or shredded coconut on top if desired. Place the pan in the refrigerator for about 45–60 minutes until the chocolate is fully set.

  6. Slice & enjoy
    Remove from the refrigerator, lift out using the parchment paper, and slice into bars or squares.

• Enjoy straight from the refrigerator for a firmer, fudge-like texture

• Store in an airtight container in the refrigerator for up to 5 days

• These bars can also be frozen for up to 2 months
